Some of the recipes take a lot of prep or a long time and I'm more of a no longer than an hour in the kitchen start to finish kind of person. The pictures are excellent though and the recipes sound delicious.

The recipes I made were very good shepherd's pie, white bean soup , but after spending lots of time in the kitchen on those, I found myself putting off making other recipes "too involved! For a laid-back day when cooking can go on intermittently for hours, this book would be great; for weekday evenings, not so much.

I'm not a vegan, but the recipes were 1 tasty and 2 easy to tweak toward carnivore if I wanted to. In summary, I'm glad I checked this book out from the library, but it won't be joining my kitchen permanently. Sep 19, Heidi Pepin rated it really liked it. I am neither gluten free nor vegan but I found a good variety of recipes I'm interested in trying. A lot of recipes and ideas I haven't seen in other cookbooks.

Wonderful ideas and recipes for those transitioning to Vegan including recipes for herbed soft cheese, cream cheese, almond feta cheese, etc. It is so great to have these easy alternatives. Lots of ideas for soups, dinners, salads, and snacks as well. This book is a treasure!
